Im Rausch der Sterne: The Best Supporting Role Is Played by a MULTIVAC Vacuum Machine

If you have watched Im Rausch der Sterne (2015), you probably remember Bradley Cooper as Adam Jones — an ambitious, demanding chef determined to make his comeback and win the elusive third Michelin star.

But if you look closely at the kitchen scenes, you may notice another interesting character: a MULTIVAC vacuum packaging machine.

It doesn’t shout. It doesn’t demand perfection. It doesn’t care about Michelin stars.
It just wants to remove some air.

“You warm food up in condoms.”

One of the funniest lines in Im Rausch der Sterne comes when Adam Jones dismisses sous-vide cooking:

“Well, you don’t cook. You warm food up in condoms.”

The joke is aimed at sous-vide cooking, where food is sealed in a bag and cooked at a precisely controlled temperature. And that is exactly where the vacuum machine becomes interesting.

Before food can be cooked sous-vide, it normally needs to be sealed in an appropriate bag. A chamber vacuum machine removes the air from the package and seals it, helping prepare the food for storage or cooking.

So Adam may not have been a fan of the technique. The MULTIVAC clearly was.

“The frying pan drawer is the museum.”

One of the most interesting conversations in Im Rausch der Sterne is not actually about vacuum packaging — it’s about the changing technology of professional cooking. Helene tells Adam that his cooking style is out of date:

“The commis call the frying pan drawer ‘the museum.’”

The point is clear: traditional frying pans, flames and old-school techniques are being replaced by modern cooking equipment and more precise methods.

She then introduces Adam to a sous-vide, or water bath, explaining that it is used to cook food at fixed low temperatures. Adam, of course, has his own description:

“It’s a condom.”

But Helene explains the real purpose: the technique can be used to seal in flavors from vegetables, herbs, spices and marinades. And that is where the MULTIVAC becomes particularly relevant.

During a busy service, Helene calls for fish. When David brings it to her, she immediately notices something is wrong — “It’s not cooked.” David realizes the problem, but Helene is furious:

“It takes a real genius to fuck up the sous vide, David, let me tell you.”

The machine visible in the movie is an interesting piece of professional kitchen equipment from MULTIVAC. It belongs to an earlier generation of MULTIVAC vacuum chamber machines, preceding the later MULTIVAC home.

From the movie machine to MULTIVAC home

The story gets even more interesting with the later MULTIVAC home. MULTIVAC developed it as a compact chamber vacuum machine for private kitchens, bringing professional vacuum technology into the home.

The machine was launched in 2016 and was designed for applications including vacuuming, marinating and preparing food for sous-vide cooking. And the design did not go unnoticed.

MULTIVAC home and the iF Design Award

The MULTIVAC home received the iF Design Award in 2017. According to the official iF Design Award entry, the machine combines stainless steel, aluminium and glass with a maintenance-free vacuum pump capable of producing the same vacuum level as machines used for industrial applications. The award entry also highlights its use for marinating, dry-aging and preparing food for sous-vide cooking.

So there is a nice connection between the two machines:

The movie shows an earlier generation of MULTIVAC vacuum technology. Later, MULTIVAC brought this type of professional chamber-vacuum technology into the home with the MULTIVAC home — and that machine received an iF Design Award.

A small machine with a professional heritage

What makes the machine in Im Rausch der Sterne interesting is not simply that it appears in a Hollywood movie. It represents a piece of professional food-processing technology with a much longer history.

MULTIVAC’s chamber machines were developed for professional food packaging, and the company has continued to develop vacuum technology for food, healthcare and industrial applications.

The later MULTIVAC home took that professional approach and adapted it for the private kitchen. Its design was compact enough for a home kitchen while retaining the characteristics of chamber-vacuum technology. MULTIVAC describes the home as weighing around 12 kg and measuring approximately 31 × 22.5 × 48 cm.

The movie is essentially showing the transition from traditional cooking techniques to modern food technology — with the MULTIVAC vacuum machine representing that modern approach. So while Adam Jones is worrying about Michelin stars, the vacuum machine is quietly doing one of the less glamorous but very practical jobs in the kitchen.

Three stars, one vacuum

So perhaps the story can be summarized like this:

Adam Jones wanted three Michelin stars. But we won’t spoil the movie by telling you whether he gets them — you’ll have to watch Im Rausch der Sterne to find out. 😉

The MULTIVAC wanted a vacuum. The MULTIVAC home eventually got an iF Design Award. 😄

And somewhere in between, someone had to put the food in the “condom.”
